Dreaming of Summer Salad
1 Bunch of cilantro washed and chopped
1 Mango diced
1 Small can of corn, drained
1 Red pepper diced
1 Small red onion finely chopped
¼ Cup olive oil
3+ Tbsp lime juice
1+ Tbsp rice wine vinegar
Salt and pepper to taste.
Toss all the ingredients in a bowl.
Adjust seasoning to taste.
